I usually avoid buying whole watermelons because they are awkward to cut and yield way more melon than I can possibly eat. However, when I noticed at the supermarket that I could get a huge watermelon for $4 I couldn’t resist the deal. I figured I’d either eat a lot of watermelon over the week or get really creative with it. I went with the latter and now have dessert to last more than for a week.
This brings me to week five of my summer of healthy eating.
Summer of Healthy Eating Week 5: Eat Fruit for Dessert
Sure, you’ve heard “eat fruit for dessert” a million times. But have you actually tried it? No. It won’t taste like pound cake but it can absolutely tame a sweet tooth.
I modified this recipe to make a refreshing watermelon granita (shown above). Because the melon was already super sweet, I used less sugar. I made one pan with lime juice and a second one margarita style – spiked with a little tequila. It was my first time making this treat but it certainly won’t be the last. I’d love to try it with honeydew or peaches.
In the past couple weeks, I’ve also taken advantage of the plentiful Southern peach harvest here in Atlanta and enjoyed grilled peaches & cream and sauteed spiced peaches with coconut thins for dessert. Ice cold melon and berries are always great options too. Sweet, simple and easy.
