This watermelon slush with lime gets its sparkle from a hit of coconut sparkling water.
If you look up the definition of summer, you’ll probably see a picture of watermelon. It’s one of the true pleasures of the season. Rich in heart health boosting lycopene, watermelon is an excellent source of vitamins A and C. And despite the sweetness, a cup of watermelon has just 45 calories. Hard to believe but it’s true. This is all good but if you’re like me you eat it because it tastes good.
I tend to buy too much of it and end up with extra. A few years ago in my single girl apartment, in July I started freezing chunks of leftover watermelon. After eating as much as my belly could take right off the rind, I’d make watermelon salad then a frozen dessert (a granita).
Because I can’t let good watermelon go to waste, I cut the watermelon and freeze the cubes. I can use the frozen fruit as ice cubes but I love to toss them into a blender to make this easy watermelon slush. You can add mint, basil or other flavors to mix it up. This method will also work well for cantaloupe, honeydew and pineapple.
