We are well into grilling season. I’ll admit. I love grilled foods but you’ll rarely find me with a bag of charcoal, lighter fluid, and a match trying to do it myself. So when someone else is firing up the grill, best believe I’m nearby with an arm full of stuff to grill too.

Nothing compares to the flavor you get from grilling outdoors but I’ve been using my indoor grill pans regularly and love that too. Though you miss some of the smoky flavor, the pan helps to caramelize the sugars in foods to create an entirely different experience that’s still really tasty. Fruit is just perfect for indoor grilling. It takes just a few minutes to make the fruit even sweeter than before.

Now bear with me on the title of this recipe. I chose to call it Piña Colada Grilled Pineapple because of the flavors. This one doesn’t actually have rum so it’s family-friendly. I struggle with the name because from my Spanish speaking days, I know that I’m being redundant. Piña = pineapple… but I’m rolling with it. Two pineapples are better than one right?

Piña Colada Grilled Pineapple Dessert

For this grilled pineapple dessert, I grilled 1/2 inch pineapple rings – just a couple minutes per side. Then topped each one with a coconut milk frozen dessert from Sprouts. I know. This is taking the easy way out but their coconut milk “ice cream” is better than the last one I tried to make. I’ll try again but it’s almost officially summer and I’ve got porch swinging and vacation planning to do! 🙂

Ingredients
  • 1 medium pineapple, cored, sliced into 8-½ inch rings
  • 1 tbsp unsweetened coconut flakes (bulk bins)
  • 1 cup Sprouts Piña Colada Coconut Milk Frozen Dessert (1/2 the pint)
  • 4 small sprigs Sprouts organic fresh mint
  • 1 tbsp Sprouts Avocado Oil (to prepare the grill)
Instructions
  1. Slice and core a medium sized fresh pineapple into about 8 – ½ inch rings.

  2. Add coconut flakes to a small skillet. Cook over medium heat, shaking or stirring frequently, until the flakes are golden brown. Set aside to cool.

  3. Heat a grill pan or outdoor grill. Prepare it by brushing the grill lightly with avocado oil so the food won’t stick. Add the pineapple rings to the grill (in batches if needed to avoid overcrowding). Grill on medium-high heat about 3 minutes per side. Flip only once for those pretty grill marks.

  4. For each person, top two grilled pineapple rings with a small scoop (~ ¼ cup) of the Piña Colada frozen dessert. Sprinkle with toasted coconut and a sprig of fresh mint. Serve immediately.
