Grapefruit Smoothie with Berries & Mint

This minty grapefruit smoothie is the perfect way to transition from winter to spring and use up extra grapefruit!

A few months ago, I became completely obsessed with grapefruit. I used to be one of those people that thought grapefruit was just too tart but somewhere along the way, my tastebuds took a turn for the liking. After I brûléed a few, juiced a few, made my Grapefruit Glazed Salmon Tacos and a Grapefruit Basil Cocktail, I still had grapefruit in the fridge.

So I made smoothies…

Like most citrus fruits, grapefruit will last for a couple weeks or longer in the fridge. They taste great during the cooler months. Though you’ll be able to get them throughout the year, now is the perfect time to try the end of the winter crop. An excellent source of vitamins A and vitamin C, grapefruit is a nutritious addition to your day. So, without further ado, here’s the recipe for this beauty!

Grapefruit Berry Mint Smoothie
  • ½ medium grapefruit peeled, pith removed
  • 1 c frozen strawberries
  • ½ c coconut milk
  • 2 T fresh mint leaves
  1. Add all ingredients to a blender. Puree until smooth. Serve immediately.
Recipe Notes
NOTE: The coconut milk here is the one in the refrigerator case not the canned one in the ethnic food aisle. There's a huge difference!
