This Grapefruit Berry Smoothie is a refreshing winter smoothie. It’s the perfect way to use up extra grapefruit and transition from winter to spring!

A few months ago, I became completely obsessed with grapefruit. I used to be one of those people that thought grapefruit was just too tart but somewhere along the way, my tastebuds took a turn for the liking. After I brûléed a few, juiced a few, made my Grapefruit Glazed Salmon Tacos and a Grapefruit Basil Cocktail, I still had grapefruit in the fridge.

So I made smoothies…

Isn’t it lovely? I fell in love with the color and the flavor was so refreshingly tart that I had to share.

Like most citrus fruits, grapefruit will last for a couple weeks or longer in the fridge. They taste great during the cooler months. Though you’ll be able to get them throughout the year, now is the perfect time to try the end of the winter crop. An excellent source of vitamins A and vitamin C, grapefruit is a nutritious addition to your day. So, without further ado, here’s the recipe for this beauty!

Grapefruit Smoothie with Berries and Mint

This Grapefruit Berry Smoothie is a refreshing winter smoothie. It's the perfect way to use up extra grapefruit and transition from winter to spring!

Ingredients

  • ½ medium grapefruit peeled, pith and seeds removed
  • 1 c frozen strawberries
  • ½ c coconut milk or plain almond milk
  • 1 tablespoon chopped fresh mint leaves

Instructions

  • Add all ingredients to a blender. Puree until smooth. Serve immediately.

Notes

NOTE: The coconut milk here is the one in the refrigerator case not the canned one in the ethnic food aisle. There's a huge difference!
