Monday Morsel: Spring Snacking on Sugar Snap Peas

I used to do this thing called the Monday Morsel. In it, I’d share one quick tip to help you reach your food, health and wellness goals throughout the week. I haven’t shared one in a while, but I want to get back to it. The Monday Morsel used to only go out via the newsletter but now I’m making it available to all. Read on for the first one!

For today’s morsel, I am encouraging you to try sugar snap peas. As the name implies, sugar snap peas are sweet and crunchy. Sugar snap peas are an excellent source of vitamin C, a vital nutrient for beautiful skin. These often overlooked veggies are also a great source of vitamin K.

Since they are a spring veggie, look for sugar snap peas at the farmer’s market right now or in the produce aisle at your supermarket. Their flavor fades with time so eat your peas soon after buying. To get started, here are 4 ways to try sugar snap peas right now:

  • Take sugar snap peas with you for snacking throughout the day (just as you would baby carrots).
  • Swap sugar snap peas for chips with your sandwich.
  • At home, add sugar snap peas to stir-fry with a little soy sauce, ginger and garlic.
  • Lightly steam or simply sauté sugar snap peas for a quick side dish.
