Wonderful Ways with Watermelon

Watermelon Slush with Lime and Coconut

Watermelon is a good source of vitamin A, vitamin C and lycopene. And if you’re looking for the perfect food for nourishment and a creative way to stay hydrated, eat up. Watermelon is over 90% water and has just 45 calories per cup.

I got the inspiration for this post yesterday as I had some Florida watermelon that was literally as sweet as candy. It was so sweet, I couldn’t finish it. So I started thinking about other ways to eat it.  Here are a few that come to mind…

Ways to eat watermelon

Season it up. For a treat add lime juice or a sprinkle of kosher salt. Or just salt. It really brings out the sweetness. You can also add a sprinkle of Chile powder or Tajin seasoning for a sweet and spicy flair.

Let it star in your salad. Combine cubes of watermelon with feta cheese and arugula.  The melon adds tons of flavor, so go light on the dressing.  This may sound strange but be adventurous. It’s delicious. Try this Watermelon Feta and Arugula Salad to get started

Make a Watermelon Slushie. This is an easy frozen treat to beat the summer heat. I even showed how easy it is to make these slushies on Instagram. Be sure to check it out.

Balance the sweet with a little spice. This Watermelon Salsa is great with chips or over fish or chicken.

Freeze it. This watermelon granita takes a few back and forth trips to the freezer but it’s easy to make and creates a refreshing dessert to enjoy for a few days. Try these Frozen Melon Margarita Pops for the adults at your next outdoor barbeque.

Just bite into it! Eat it straight from the rind. Yes. This is the country girl coming out of me but hey… no need to get fancy when it’s that good.
