Piña Colada Grilled Pineapple Dessert

Ingredients

  • 1 medium pineapple, cored, sliced into 8-½ inch rings
  • 1 tablespoon unsweetened coconut flakes
  • 1 cup Coconut Milk Frozen Dessert
  • 4 small sprigs fresh mint (optional)
  • 1 tablespoon Avocado Oil to prep the grill

Instructions

  • Slice and core a medium sized fresh pineapple into about 8 – ½ inch rings.
  • Add coconut flakes to a small skillet. Cook over medium heat, shaking or stirring frequently, until the flakes are golden brown. Set aside to cool.
  • Heat a grill pan or outdoor grill. Prepare it by brushing the grill lightly with avocado oil so the food won’t stick. Add the pineapple rings to the grill (in batches if needed to avoid overcrowding). Grill on medium-high heat about 3 minutes per side. Flip only once for those pretty grill marks.
  • For each person, top two grilled pineapple rings with a small scoop (~ ¼ cup) of the Piña Colada frozen dessert. Sprinkle with toasted coconut and a sprig of fresh mint. Serve immediately.
