This healthy summer dessert combines warm grilled pineapple with a fruity coconut milk ice cream. Ready in under 5 minutes, this vegan dessert is a light and sweet way to end a meal.
1medium pineapple, cored, sliced into 8-½ inch rings
1tablespoonunsweetened coconut flakes
1cupCoconut Milk Frozen Dessert
4small sprigs fresh mint (optional)
1tablespoonAvocado Oilto prep the grill
Instructions
Slice and core a medium sized fresh pineapple into about 8 – ½ inch rings.
Add coconut flakes to a small skillet. Cook over medium heat, shaking or stirring frequently, until the flakes are golden brown. Set aside to cool.
Heat a grill pan or outdoor grill. Prepare it by brushing the grill lightly with avocado oil so the food won’t stick. Add the pineapple rings to the grill (in batches if needed to avoid overcrowding). Grill on medium-high heat about 3 minutes per side. Flip only once for those pretty grill marks.
For each person, top two grilled pineapple rings with a small scoop (~ ¼ cup) of the Piña Colada frozen dessert. Sprinkle with toasted coconut and a sprig of fresh mint. Serve immediately.
