- ½ pound fresh salmon
- 1 tablespoon white miso paste
- 1 tablespoon pure maple syrup
- 1 tablespoon warm water
- 1 teaspoon rice vinegar
- 1 teaspoon grated fresh ginger
- pinch red pepper flakes (optional)
- 3 cups fresh broccoli florets
- 1 ½ tablespoon sesame oil
- coarse salt and pepper to taste
Preheat the broiler - set on high. Slice salmon into two equal portions, pat dry, and set aside.
In a small bowl, whisk the miso paste, maple syrup, water, vinegar, ginger and optional red pepper flakes until smooth.
Spread broccoli onto a sheet pan in a single layer. Drizzle with sesame oil, and sprinkle with salt and pepper to taste. Toss to coat.
Add salmon fillets. Spoon or brush the glaze on top of the fillets. Broil on high 7-8 minutes. Serve.
Slice the salmon into pieces that are about the same size. This will ensure the salmon cooks evenly.
Line the pan with foil for easier cleanup.
