Lemon Berry Baked Oats
This Berry Lemon Baked Oats is packed with oats, sweet berries and a touch of lemon for a fresh take on baked oats. This easy recipe is prepped in just 5 minutes and can be made for one or easily adjusted for four!

.5 cup traditional Quaker Old Fashioned Oats .5 cup plain unsweetened plant milk 1 tablespoon maple syrup .5 teaspoon vanilla extract or paste .5 teaspoon ½ teaspoon baking powder Pinch of salt 1 large egg (optional, see notes) .25 cup fresh or frozen mixed blueberries, raspberries or blackberries .5 teaspoon lemon zest
Preheat the oven to 375 F.
In a small blender, puree the oats, milk, vanilla, baking powder, salt and egg (if using) until smooth.
Place the berries in a 6-ounce ramekin and sprinkle evenly with the lemon zest. Pour the batter on top of the berries.
Bake for 30 minutes, until the bake rises and is golden brown. Serve warm.
NOTES:
Omit the egg for a vegan recipe. The oats will not reach a rich golden brown color but will still taste great!
