Lemon Berry Baked Oats

This Berry Lemon Baked Oats is packed with oats, sweet berries and a touch of lemon for a fresh take on baked oats. This easy recipe is prepped in just 5 minutes and can be made for one or easily adjusted for four!

Ingredients

  • .5 cup traditional Quaker Old Fashioned Oats
  • .5 cup plain unsweetened plant milk
  • 1 tablespoon maple syrup 
  • .5 teaspoon vanilla extract or paste
  • .5 teaspoon ½ teaspoon baking powder
  • Pinch of salt
  • 1 large egg (optional, see notes)
  • .25 cup fresh or frozen mixed blueberries, raspberries or blackberries
  • .5 teaspoon lemon zest  

Instructions

  • Preheat the oven to 375 F.
  • In a small blender, puree the oats, milk, vanilla, baking powder, salt and egg (if using) until smooth.
  • Place the berries in a 6-ounce ramekin and sprinkle evenly with the lemon zest. Pour the batter on top of the berries.
  • Bake for 30 minutes, until the bake rises and is golden brown. Serve warm.

Notes

NOTES:
Omit the egg for a vegan recipe. The oats will not reach a rich golden brown color but will still taste great!
