Egg Avocado Breakfast Tacos

Easy Egg & Avocado Breakfast Tacos combine savory scrambled eggs with creamy avocado and a sprinkle of fresh cilantro and salsa to break out of your breakfast rut.

Ingredients

  • 2 soft corn tortillas
  • ½ teaspoon oil or butter
  • 2 tablespoons diced sweet onion
  • 2 eggs beaten
  • salt and pepper to taste
  • 2 tablespoons chopped avocado or more
  • homemade or good quality jarred salsa I use Frontera brand
  • fresh cilantro

Instructions

  • Heat the tortillas in a dry pan or safely over an open flame until slightly charred or blistered. Set aside.
  • In a small skillet, heat the oil or butter on medium-low heat. Lightly saute the onions. Turn the heat to low. Add the eggs. Season with salt and pepper to taste. Cook slowly to desired doneness.
  • Add the cooked eggs to the tortillas. Top with avocado, salsa and fresh cilantro. Fold and enjoy.

Notes

Tips for reheating tortillas

You can heat tortillas in many ways.
In the microwave wrapped in a damp napkin helps keep the tortillas pliable.
Using a dry skillet is easy.
I am a fan of holding tortillas over a flame with tongs. You'll need a gas stove for it of course. And this method is not for everyone. If done improperly it can be a fire hazard. So doing that is at your own risk. I am not responsible for the results.
I personally use this method to get the lovely char and flavor.
