Ingredients
116 oz. bag frozen cut leaf spinachthawed and squeezed of excess liquid
2cupscottage cheese
2tablespoonsextra virgin olive oil
1teaspoongarlic powder (or 3 cloves fresh garlic)
2teaspoonsonion powder
½teaspoonground black pepper
coarse salt to taste
tortillas chips, fresh red pepper sticks for serving
2tablespoonsdiced red bell pepper (garnish)
Warm Spinach Dip
all ingredients above
½cupshredded Parmesan cheese
Instructions
Blend cottage cheese with the onion, garlic, pepper and olive oil in a blender until smooth.
Pour cheese mixture into a medium mixing bowl. Add the spinach. Stir in the spinach until well combine. Add to a serving bowl and garnish with chopped red bell peppers if desired.
Serve with tortilla chips or fresh red bell pepper strips for scooping.
Notes
For a warm dip: Add the dip to a small, heat safe casserole dish. Top with ¼ cup parmesan cheese. Broil on high 5-10 minutes, or until the cheese is brown and bubbly.
