½cupgood quality feta, cubed or crumbled
2tbspaged balsamic vinegar*
Arrange the arugula in a large bowl, top with the watermelon and feta. Drizzle with the balsamic vinegar. Serve. Too easy!
* Aged balsamic vinegar has a thick, almost syrupy consistency. The rich, slightly sweet flavor works well in this recipe. If you cannot find it, you can use a balsamic glaze (found near the vinegars in the supermarket) or you can make a balsamic reduction at home by boiling good quality balsamic vinegar.
