This easy White Bean Arugula Salad is a no-cook meal that’s perfect for a light lunch or snack dinner served on crostini! It's perfectly seasoned with a fresh homemade white wine vinaigrette.
115 oz. can Great Northern or Cannellini beans, rinsed and drained
15 oz. package fresh baby arugula
½medium red onion, thinly sliced
1baguette, sliced and toasted (optional)
Instructions
In a large bowl, whisk the vinegar, mustard, honey, garlic, olive oil, salt, and pepper until creamy. Add the beans, arugula, and onion. Toss to coat and serve over the crostinis if desired.
Notes
To save time you can purchase sliced crostini in most grocery store bakeries.
