White Bean Arugula Salad on Crostini

This easy White Bean Arugula Salad is a no-cook meal that’s perfect for a light lunch or snack dinner served on crostini! It's perfectly seasoned with a fresh homemade white wine vinaigrette.

Ingredients

  • ¼ cup white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 garlic clove, grated
  • ½ cup Extra Virgin Olive Oil
  • coarse salt and pepper to taste
  • 1 15 oz. can Great Northern or Cannellini beans, rinsed and drained
  • 1 5 oz. package fresh baby arugula
  • ½ medium red onion, thinly sliced
  • 1 baguette, sliced and toasted (optional)

Instructions

  • In a large bowl, whisk the vinegar, mustard, honey, garlic, olive oil, salt, and pepper until creamy. Add the beans, arugula, and onion. Toss to coat and serve over the crostinis if desired.

Notes

To save time you can purchase sliced crostini in most grocery store bakeries.
