With Memorial Day weekend in the books, July 4th quickly approaching and the official start of summer next week, healthy grilling is a hot topic (pun intended). So, today I’m excited to share not just one but six healthy recipes for your summer cookouts! My watermelon feta salad is a good starter, side, or refreshing end to dining al fresco.

I love getting together with friends and family for a cookout. I’m usually the one on vegetable and sides duty – because honestly – nobody wants me to cook the meat. It’s just not my forte. Or make the sweet tea. I’ve been known to leave the “sweet” too much to the imagination. That’s the dietitian in me I guess and the fact that I don’t like things too sweet. Anyway, you can call me side dish Sally.

I used watermelon for this recipe because I’d just gotten a huge one that was divinely sweet but too much to eat. I love my watermelon cold and plain BUT this sweet, salty, tangy combo is insanely good. The watermelon is hydrating and refreshing while the feta brings in just enough bite to make it feel like you are having a real dish versus a snack. You can also take the easy way out and make watermelon, feta, basil bites like these ones I shared on Instagram a couple of weeks ago.

But this salad will be ready in no time!

Ingredients
  

  • 6 cups watermelon, cubed
  • ½ cup good quality feta, cubed or crumbled
  • 2 cups arugula
  • 2 tablespoon aged balsamic vinegar*

Instructions
 

  • Arrange the arugula in a large bowl, top with the watermelon and feta. Drizzle with the balsamic vinegar. Serve. Too easy!

Notes

* Aged balsamic vinegar has a thick, almost syrupy consistency. The rich, slightly sweet flavor works well in this recipe. If you cannot find it, you can use a balsamic glaze (found near the vinegars in the supermarket) or you can make a balsamic reduction at home by boiling good quality balsamic vinegar.

    This sounds amazing but I can’t eat balsamic. What do you think I could Replace the balsamic with? I’m highly allergic to sulfates.

      Sorry to hear about your allergy, Rachel. You can definitely leave the balsamic out and dress lightly with your favorite vinaigrette or even a squeeze of lime juice, olive oil, and a little extra salt and pepper.

    I normally love just plain watermelon. I could eat it all day long. I’ve always wondered about using it in a salad, and I will definitely be trying this!

      SAME. I have a bunch of it in the fridge right now – cold, plain watermelon is THE best. But I was pleasantly surprised when I tried it with the feta. The salty-sweet combo is lovely. And this works too if you just want to do something a little different.
