Ever consider a carrot smoothie? It’s a sweet way to use up extra carrots or to add a big pop of color and nutrition to your morning smoothie. When I shared this recipe on Instagram, a few people reached out to say they never thought of using carrots in a smoothie because they didn’t believe that they’d blend well. Well, the do! I shredded them here, but you can also use sliced carrots in a high-powered blender.
This smoothie needs no added sugar. The carrots and the Medjool date provide plenty of sweetness and flavor. I love using dates in smoothies. They not only add natural sweetness but also fiber and a delicious caramelized flavor.

Carrot Pineapple Smoothie
Ingredients
- 2 cups shredded carrots
- 1 pitted date
- 1 cup unsweetened coconut or almond milk (refrigerated)
- ½ cup frozen pineapple
- 2 T hemp seeds (or chopped walnuts)
- dash cinnamon
- toasted, shredded unsweetened coconut (garnish)
Instructions
- Add all ingredients to a high powered blender. Blend until smooth.
