Carrot Pineapple Smoothie with Coconut

Ever consider a carrot smoothie? It’s a sweet way to use up extra carrots or to add a big pop of color and nutrition to your morning smoothie. When I shared this recipe on Instagram, a few people reached out to say they never thought of using carrots in a smoothie because they didn’t believe that they’d blend well. Well, the do! I shredded them here, but you can also use sliced carrots in a high-powered blender.

Carrot Pineapple Smoothie Ingredients

This smoothie needs no added sugar. The carrots and the Medjool date provide plenty of sweetness and flavor. I love using dates in smoothies. They not only add natural sweetness but also fiber and a delicious caramelized flavor.Carrot Pineapple Smoothie with Coconut
